Chickpea Curry

1 can of chickpeas (drained and rinsed)

1 onion (chopped)

2 garlic cloves (minced)

1 tsp ginger (minced)

1 tsp ground cumin

1 tsp ground coriander

1 tsp turmeric

1 can of chopped tomatoes

1 can of coconut milk

Salt and pepper to taste


Instructions:

In a large pot, sauté the onion, garlic, and ginger until softened.

Reduce heat and simmer for 10-15 minutes.

1 cup of lentils (rinsed)

6 cups of vegetable broth

Salt and pepper to taste


Instructions:

 In a large pot, sauté the onion, garlic, carrots, and celery until softened.

Add the spices and cook for another minute.

Add the lentils and vegetable broth, and bring to a boil.

Reduce heat and simmer for 30-40 minutes.

Season with salt and pepper.
